Kombucha and Lemon Jellies

It's been a while since I last posted on here! Yikes! I am determined however to get back into the swing of writing and will be posting regularly for you, the lovely reader!

To ease back into it I have decided...after prompting from a friend ;) that this is a good place to start. These little gut healing bombs of deliciousness are super easy to make, super tasty to eat and super effective at supporting the good guys in our tummies and our immune system.

 

* I think it's important to note that if you are not in the habit of eating or drinking probiotic rich foods and beverages you may experience some discomfort..i.e bloating, gas, headaches if you dive right in and you have existing dysbiosis (fancy naturopath speak for "the microbes in your digestive system are out of balance). If this is you I suggest firstly starting slow with foods such as kimchi, sauerkraut, fermented vegetables and drinks such as kefir, kombucha and kvass...like i'm talking 1/4 - 1/2 tsp a day, see how your body responds and then gradually increase over time. If you still notice discomfort I would suggest seeing a qualified practitioner, naturopath, nutritionist or integrative functional doctor to uncover what is the underlying cause for your digestive complaints. This may be the most important piece to your healing puzzle!

 

Ingredients

1 C kombucha (desired flavour optional) 

1 C coconut water or water

Juice of half lemon

2 tbsp raw honey

2-3 tbsp gelatin (I use Great Lakes)

1/2 C frozen organic blueberries (optional)

 

Method

Add kombucha, coconut water, honey and lemon juice to medium size saucepan. 

Gently warm through over low heat.

When warm sprinkle over gelatine (use more gelatin for a firmer consistency). Continue stirring until dissolved.

Pour into silicone molds or lined baking tray. Scatter over berries.

Pop into the fridge to set.

Once set remove from mods or remove from tray and slice into cubes.
